1⁄2 cup cooked couscous
1 cup broccoli, carrot, or cabbage slaw
1 cup mixed greens
1 cup black beans, rinsed and drained
1⁄3 cup cooked, diced sweet potato, optional
1⁄4 cupHummus, prepared
1⁄4 cupChipotle Aioli, prepared, optional
- Place couscous in a serving bowl.
- Top with slaw, greens, and black beans. Add sweet potato, if desired.
